Clover Club

Make it with gin or with vodka - it’s delicious either way.

  • 2 oz. Gin
  • 1 Egg white
  • 1 1/2 oz. Fresh lemon juice
  • 1/2 oz. Raspberry syrup*
  • Garnish: Raspberries

  1. Combine all ingredients into cocktail shaker. Make sure the seal is tight and dry shake for 30 seconds.
  2. Open the shaker. The contents should be somewhat frothy. Add ice to cocktail shaker.
  3. Shake for another 30 seconds or until a good amount of froth appears. Double strain into coupe glass.
  4. Garnish and serve.

How to make the raspberry syrup

Stovetop: Take 8 oz. of raspberries, a cup of sugar and 1/2 cup of water and add it to a pan. Bring to boil and allow to cool. Once cooled, squeeze the raspberries of their remaining juice and strain into a jar or bottle. Keep for up to 30 days in the refrigerator.
