But if you don't like jalapeno or hot pepper spice, then leave it. At $130 it's a tough call, and it really depends on the flavors you like. Not bad as a bourbon, but you're paying for unique spice notes.
Tasting notes
Chicken Cock Private Cask 7 year is a limited release bottle, aged 7 years. Chicken Cock Whiskey officially contract distills through Bardstown Bourbon Co. The suggested retail price for a 750ml bottle of Chicken Cock’s Private Cask is $130. This particular bottle is a store pick.
The nose provides a bouquet of sweet aromas including honey, corn, caramel, and a nice floral scent as well.
On the palate we got that honey note upfront followed by caramel and then a blast of hot pepper or jalapeño.
The finish transitions back to sweet with lingering spice, which tasted a bit like peanut butter and caramel.
Okay so this one was a bit tough for us, to be frank. We like pepper spice, but this was a bit spicier than we typically prefer. It wasn’t ethanol-forward, or off putting by any means – just spicy. We could imagine that if we were big fans of spicy food or very spicy whiskey, we’d be all in on this. That’s why it was such a tough call for an overall rating. This one is really based on one’s drinking preference.
Overall, we’re giving Chicken Cock Private Cask 7 Year Bourbon a 7.5 out of 10 – it holds up as a reasonably decent bourbon but shines as a great spicy bourbon, if that’s your speed.
