The Story
Cascade Hollow has accomplished a lot in the short time Nicole Austin has taken over as General Manager and distiller in 2018. From launching a bottled-in-bond series, creating a limited edition Cascade Hollow lineup and now the first “Bourbon” under the George Dickel label.
Released in the summer of 2021, Dickel used the word “Bourbon” for the first time on any of its labels. Austin sampled thousands of barrels to find the right batch that best exemplified a bourbon profile. She specifically searched through aged stocks to showcase the mature whisky Dickel has to offer and that they can offer more than the “Tennessee Whisky” profile they are known for.
This bourbon is made with Dickel’s standard mashbill, 84% corn, 8% rye, and 8% malted barley. As a Tennessee bourbon, state law requires whiskey distillers to use the Lincoln County Process. Dickel takes this a step further and chills their whiskey to 40 degrees before beginning the 13 foot charcoal filtering journey.
Nose
Sweet on the nose, with plenty of caramel and vanilla, hints of corn, crisp apple, slight oak and very light cinnamon. Honey undertones throughout.
Palate
Very light and sweet. Hints of oak and spice with some honey. The honey stands out more than the latter with a quick slight alcohol burn. overall very easy to sip on and fit to be considered as an entry level bourbon.
Finish
It’s a medium finish with slight alcohol burn, but also incorporates honey, oak, and some lingering fruit notes.
Verdict
Buy at that min pricing.
Compared to many “affordable” whiskeys, we feel this bottle should be given some consideration. There is more bang for your buck than something like a Basil Hayden’s and it also has an alluring age statement and will cost you $10-$15 less. This pour is more reminiscent of the standard Buffalo Trace offering with a nice oaky twist.
